The Easiest Shrimp Quesadillas You’ll Ever Make

My husband and I love shrimp and we love Mexican food, and this shrimp quesadilla recipe is an easy and delicious way to combine seafood and Mexican fare.

I used to make shrimp quesadillas using a recipe from a popular food blogger, but it was a bit more work than I preferred, requiring a lot of diced fresh peppers and onions, among other things. So I created my own shrimp quesadilla recipe using ingredients that can be quickly thrown together. This is especially nice on busy weeknights or any time when you want a quality Mexican-inspired meal.

You also can experiment with using diced steak or chicken in place of the shrimp in these quesadillas.

Easy Shrimp Quesadillas

Ingredients:

1 package (approximately 1 lb.) of raw shrimp, thawed, shells and tails removed

1/2 jar (about 4-5 oz.) salsa of your choice

1-lb. package of shredded Mexican-style cheese

1 package flour tortillas

About 3 tablespoons of salted stick butter

Optional toppings: salsa, sour cream, guacamole, diced tomatoes, chopped lettuce

Directions:

  1. Heat a medium skillet and add the shrimp and salsa. Cook until shrimp are pink and done.
  2. Heat a griddle or large skillet and add 1/2 tablespoon of salted stick butter. Place one flour tortilla on the skillet and top with a handful or two of shredded cheese and several spoonfuls of the cooked shrimp and salsa mixture. Sprinkle a little more cheese on, and top with a second flour tortilla. Cook until the bottom tortilla gets slightly browned and crisp. Flip over (adding another 1/2 tablespoon or so of butter if desired) and cook until the other side is also golden and crisp. Repeat the process, building more quesadillas.
  3. Slice the quesadillas into wedges and serve with salsa, sour cream, guacamole, diced tomatoes, and/or chopped lettuce.

This meal serves about four people, and it also goes well with side dishes such as refried beans, Mexican-style rice, or chips and salsa.
